  • JayH oh this one. Ok this looks amazing.
  • munchiemummy @JayH thanks! It's super easy. My husband used to be a meat lover but now requests this veggie lasagna regularly - it's one of his favourites.
I'm calling this one the "Locals Only Quiche".

  • PAFarmer I like the word "rashers"...does that mean a strip?
  • munchiemummy @PAFarmer yep! Over here in the UK it's unsmoked back bacon, so the pieces are a bit larger than American style bacon (from the belly), and they're called rashers. Smoked bacon would be fine in...

  • etsummer One of my favorite easy ways to use up a leftovers is naan pizzas. Whatever kind of sauce you have in the fridge (or avocado) plus roasted veggies, bits of cheese, herbs, etc.
  • sociokim Such a great idea! Basil, peaches, nuts.. Love it!
  • carpe_deli I agree 100% @etsummer there are so many unique versions to make

  • garv Try roasted broccoli stems & almonds soup. if you are feeling indulgent add some goat cheese !
  • munchiemummy @garv after I took this pic I topped it with some crumbled feta! The flavours worked great together. And I bet the almonds would make it really nice and creamy without using any dairy.
  • garv Yep almonds does wonders for the texture. Gonna try feta the next time around. Thanks
