Installed some state-of-the-art solar panels and now working on the garden. It's time for us to get back to the land, produce our own energy and grow our own food. #FoodRevolution
  • etsummer Wow @Nelson is this your land? What are you planning on planting?
  • munchiemummy Awesome! My husband and I are going to be installing solar panels when we buy a home in 2-3 years.
  • Nelson Yep! 32 acres in Northeastern PA @etsummer and thinking of starting with kale and squash. End of frost season here cuz we're in the mountains

We often just use the parsley tops, but you can harvest the parsley root and roast them as fries or purée them as a soup. Tastes like a creamier version of celeriac. #FoodRevolution
  • IEatWell these guys are definitely an underutilized root vegetable.
  • munchiemummy Had no idea! Can't wait to try this. What time of year is best for harvesting these?
  • sugardetoxme I'm starting to see these less and less in the farmers market @munchiemummy

  • munchiemummy Such a great idea! I have used them in soups before but this sounds like the next generation of "zoodles" it's such a good idea.
  • etsummer Ha I have so many leek greens in my freezer waiting to be used to make veg broth but this sounds like such a better idea since I can't seem to find the time to actually make it!
  • JenniferEmilson I freeze mine for when I make veggie stock! #FoodRevolution

  • etsummer My fav breakfast! I always chop up whatever leftover bits and ends of veggies I have and throw 'em in too.
  • DietID_TeamDietitians My favorite!! I have yet to own a cast iron skillet though, so I've been sort of winging it this whole time. Do you use a skillet? or just a regular pan?
  • Gwendolyn @Rachna you need a cast iron! They are fantastic!

  • DietID_TeamDietitians stems included?
  • FarmerDave Greens, even if slightly wilted, work great in a stir fry. I'm glad you used them. They take a lot of work (and water) to grow, so I always cringe when I see someone throw them away.
  • munchiemummy @rachna If I can't use bits and ends of veggies, I save them to make vegetable stock or soups.
