What to do with all those artichoke leaves?
I'm cooking artichoke hearts today, but always despair all the leaves that I have to compost. I'm thinking of making an artichoke soup by soaking the leaves but does anyone else have a good solutio...

mirasingh I've heard you can steam them with herbs and butter - any herbs if you have some lying around. I also just came across this thread on @food52...

olivettefarm I remember an herbalist I met once dried them and used them in teas. I think he may have used them as a digestive. We tried to use the leaves once in stock, but weren't crazy about it.

JenniferEmilson Sell by dates and Best by dates are purely for the retailer's benefit. Common sense needs to be taught as well. I was intrigued by this conversation last week. And like @rachna said, Use your nose....
