Knowing your tenderloin

Salmon tenderloin is the hard to get at meat along the spines of salmon. Often wasted, it's actually easily scooped off the spine with a spoon, and then sautéed the same way you would sautée chicken, tofu or ground meat. Delicious as a taco filling, on salads, or in soups... The possibilities are endless! So next time you filet a fish --- don't forget to save the tenderloin! #nofoodwaste
