Veggie Chili - Perfect for those last few chilly days

A cold front recently came to Detroit, so I soaked a random assortment of legumes & lentils overnight. Then the next day I sautéed veggies and mushrooms, seasoned with spices and a bay leaf, filled the pot with some stock and simmered the legume/lentil mix until it was ready to serve. Super easy to make and perfect for sharing at a #FoodRevolution potluck!
