DietID_TeamDietitians 10yr Delayed response here - I've seen it used like a regular Indian squash - temper cumin and mustard seeds with chili, sautéed onions, and then pan fry these with your favorite mix of Indian spices - turmeric, red chili, coriander-Cumin powder. It sort of works like tofu - takes whatever flavor you add to it -
