I made ratatouille last night and have lot of leftover, so I am having it for lunch again!
Nothing better than having a healthy breakfast to start the day!
Roasted veggies (carrot, parsnips, beetroot, fennel and red onion), baby spinach and guacamole served on top of egg fried rice
