Giving this paleo thing a try.
I think paleo might just be a secret conspiracy to eat more interesting things... if you can't fill your plate with a staple starch, it forces you to get creative with the veg!
Since going gluten-free 2 years ago, I've mastered the art of turning everything into a taco (with a corn tortilla). Here's a shrimp "bahn mi" taco with pickled veg, avo, and hot chili sauce

Is a #grandmastand a thing? My grandma made a veg friendly lettuce wrap filling for me with mushrooms, green beans, carrots, water chestnuts, celery, and cashews!

shiraz Yeah not keen on vinegar pickling. Love using salt and native yeasts to do all of my veg preserving.

I make these too! Sometimes I use the larger muffin pans and put shredded potatoes in the bottom, add veg and then crack and egg on top and bake – it's a birds nest!
