Round 1 of gluten-free Mac & Cheese R&D. Based on Beecher's "World's Best" Mac & Cheese recipe with Tinkyada brown rice pasta & Bob's Red Mill 1to1 baking flour (it made a gorgeous bechamel).

Woooah! Do you mash the beets first? Do they add sweetness?! Do you adjust the other ingredients in some way to account for the extra liquid - or... Ack! So many questions! Must know how this works!
