Stopped for a quick lunch before catching the bus back home from DC. Panas Empanadas were so yummy!

Summer Friday // work from home lunch! I love throwing leftovers together to make something new!

Tuesday's fare: Mediterranean spiced chicken, couscous, and sautéed veggies, all stuffed in a little pita pocket with hummus and arugula! Grilling and dining outside is such a treat!

Pushed through the heat and made a tasty dinner. Mandarin chicken, a la Trader Ming, served on a bed of sautéed yellow corn cut from the cob, onion, garlic, zucchini, and jasmine rice.

Happy Saturday! Egg scramble with zucchini, red onion, and homegrown tomatoes! Topped with fresh salsa, of course!
