A quick and simple way to enjoy lentils
Eating more beans and lentils is a wonderful way to get more fiber and nutrients. A lentil salad is one of the easiest, fastest, and most delicious ways to enjoy lentils. Here's the recipe:
- Boil one cup of lentils in four cups of water until tender (about 20 minutes).
- While the lentils are boiling, finely dice about 1-1/2 cups total of any vegetables you like to eat raw. This one has celery, red onion, red pepper, and carrots.
- Add your favorite dried herbs, a squeeze of lemon juice, and an optional splash of olive oil, a bit of salt and pepper, and you have a meal plus leftovers in less than 30 minutes.
