annefood 6yr No, you don’t need to avoid lactic acid in the Avoid Added Sugar Challenge. It’s used in fermentation (yogurt, pickled veggies, sourdough...) and as a preservative or flavoring agent.

annefood 6yr And lactose is an intrinsic sugar (not an added sugar) that is naturally occurring in dairy. So no need to worry about that either.

ingalls 6yr And speaking of fermentation - how does kombucha and kefir waters rank with the sugar challenge? I don’t make my own yet, so have been avoiding since I read those tend to have added sugar outside what’s needed for the fermentation itself.

annefood 6yr Great question! It depends on the kombucha. GT’s lists only kombucha, sometimes tea, and fruit juice as ingredients. While sugar is needed for fermentation, they don’t add any for sweetness, so those are fine. GT’s CocoKefir seems to be in the same boat. Other kombuchas such as Kombucha Wonder Drink list sugar in addition to kombucha on the ingredients list, so those would not be allowed.
