annefood 7yr But the basics are to cut it in half lengthwise and scoop out the seeds. Put it cut side down in a glass pyrex baking dish and add about an inch of water. Roast it at 375 for 30-60 minutes depending on how big your squash is- you know it's done when you can pierce it easily with a fork. Next use a fork to get the flesh out of the shell by scraping across the grain, and add the spaghetti strands to a bowl. I like to mix it with olive oil and minced sautéed garlic, lemon zest, chopped basil, toasted pine nuts and pecorino and/or ricotta cheese. With some sautéed greens on the side. Yum.
