Impossibly made it to Impossible Burgers at Momofuku Nishi debut tonight

the standard bun ain't vegan so this was more like a melt on rye with excellent sauce, pickles, caramelized onions and classic fast food fries | honestly it reminds me of 4th grade cafeteria burgers (in a good way!) as it was super well done and not "bloody" at all. I can only guess it's not really like meat but it's also totally not like eating a seitan burger either? But it was hella greasy and tasty, a win either way.
