MLapi The onions were slowly cooked for roughly 2hrs. Broth was simmered at 180 * for 18 hrs.

Campus raised duck, Barber's farm kale, canellini beans and black currant jus. Everything sourced locally and produced by my Farm to Table class at SUNY Cobleskill.
