Did a lunch for 6 today: started with chilled beetroot soup topped with feta cheese and Greek basil, main was slow roasted (4 hours) lamb served with salsa verde, za'atar yogurt, green herbs salad and crusty bread. Finished off with mixed berries and cream
Sautéed beet greens with chorizo, topped with a paprika fried egg.

I bought a bunch of beautiful beetroots with their greens still attached, so I made beetroot salad for one meal and used the beet greens for this simple and delicious dish! #nofoodwaste
