Sunday night leftover-makeover

What to do with leftover shredded cabbage, the last of the season's cherry tomatoes from the garden, and a leftover half of a red onion? Cook up a cup of quinoa, add a can of rinsed chickpeas, a handful of fresh parsley from the windowsill planter, plus the juice of three lemons and a drizzle of olive oil along with some salt and pepper. Toss it all together and enjoy! A real hit with the kids (who enjoyed helping prepare).
