The secret to oil-free roasted potatoes

After you peel and cube the potatoes, soak them in cold water for about 30 minutes. That's the secret! The soaking makes the potatoes crisp up better, with or without oil. Make sure to dry the cubes thoroughly, toss with your favorite seasonings, and either roast in the oven or cook in the air fryer at 400°, tossing every 5 minutes, until done.
