What my family of 4 (2 year old, 5 year old, and grownups) are eating for dinner!
Ok, say what you will about Trader Joe’s salmon but sometimes when you are in a pinch, if salmon is part of your family’s diet, this is a great, fast, affordable option to create a balanced meal. Dietitians - keep me honest!
- salmon was marinated (for 10 min) with honey herb seasoning from spicewala and pan seared (basically put it on the pan, cover, and walk away!)
- meanwhile, I sautéed some onions, lots of mushrooms, leftover rice and seasonings.
- topped with coriander (buy it from the Indian grocery store! It is much cheaper!)
- sprinkle with lemon juice All while responding to an email. #momlife
