We had this wonderful socca (chickpea pancake) topped with a fried egg, feta cheese and salad for breakfast today!
It is healthy, delicious and keeps me full for a few hours!!

Yuba (aka tofu skin) is a delicious substitute to meat products and pack full with protein. If you love tofu, you will love Yuba, even if you don't like tofu, you will still like Yuba :)
