Local Food in Hospitals: Connecting regional vendors & hospital foodservice

"Healthcare food service professionals recognize that the way food is grown, produced and distributed has a broad impact on the communities they serve, and they are searching for ways to provide fresh, healthy, local foods at a cost they and their constituents can afford. 
Hospitals offer unique challenges for smaller vendors including product specifications, staffing to incorporate scratch cooking, strict food safety standards and dietary-specific menus. They are accustomed to working within a system of national and international distributors that makes it difficult for them to source directly from regional farmers. Additionally, they often combine their purchasing power across many hospitals through a Group Purchasing Organization (GPO) which restricts their ability to purchase from un-approved vendors.
Regional, sustainable producers are eager for their products to reach these institutional customers, but are often uncertain about how to approach these challenges.
