Made lunch and now I want to eat it for breakfast 😋

Purple sweet potato and spicy green beans! My fridge is in dire need of food and had limited ingredients to play with this morning, so made this colorful spicy & sweet dish for lunch. How to make it? Baked purple sweet potato slices at 350 degrees for about 15 (turned them over halfway) minutes. Sprinkled some sea salt and turmeric over them. I filled the try with water that came up right under the thick potato slices. In a pan at medium to low heat, add coconut oil, chopped garlic and then add in your green beans. Sauté them. Now your sweet potatoes should be done, so add in the water from your purple sweet potato so the green beans can marinate in it. Chop the sweet potatoes and add to the pan. Increase heat to medium high and add in some onion powder (optional), red cayenne pepper, black pepper, 1t fresh ginger and a tablespoon of Tamari Soy Sauce (optional). Mix and let the aroma fill up your kitchen. Try it, adjust until you love it and viola lunch is ready. Have a great day!
