Guanciale- Air dried pig cheeks!! So, I was at the market and my # was overlooked so a nice man was served before me. He asked for a pig cheek. I asked him what he does with that. Fries it up like bacon and uses in pasta like carbonara . I am going to try it! He says it is fantastic!!
