Need veggie inspiration? Remember the 3-color rule!

Got some veggies in the crisper/freezer but not sure what to make? Think color -- choose 3 different color veggies for maximum nutrition, eye appeal, and flavor. Here I sauté gorgeous green asparagus, red onion, and orange sweet pepper. Here are some ideas for a complete meal:
1. Toss with cooked cooled whole grain pasta and a vinaigrette for a healthy pasta salad
2. Add cumin, chili powder, and oregano and serve with tomato salsa, black beans, and corn tortillas
3. Add za’atar, lemon juice, and parsley and serve over whole grain couscous (don’t have za’atar? Use a blend of oregano, thyme, cumin, sumac [if you have it] and sesame seeds)
4. Add dry BBQ rub and toss well. Serve over brown rice with grilled chicken, shrimp, or tofu that has been brushed with a bit of BBQ sauce.
