Puff pastry for the win!

I was strapped for time and needed to host 25 people of all different ages. I saw all these great puff pastry tarts via NYTimes cooking and decided to try my own. - store-bought puff pastry
- cheese base - ricotta, feta, goat, Brie
- different combo of roasted veggies! One had roasted baby potatoes and herbs, another had leftover fajita mix 🤷🏽‍♀️, and another bad roasted mushrooms and potatoes.
These cook up quickly, are easy to prep, and easy to eat while chasing little kids and helping elders.
