Greenhouse at sunset.
Yesterday was a tough day on the farm, but views like this make it all ok :). Not exactly food related, but I thought the pic was too good not to share.
These tiny plants pack a huge flavor.
Red Russian Kale, Napa Cabbage, radish micro, dill and Tuscan Kale. These are all from thinning out our seedlings in the greenhouse. I always love making salads off of our thinnings #nofoodwaste

DietID_TeamDietitians Does "thinning" In farming mean the same thing as "thinning" when you get a haircut? Maybe a dumb question, but I don't know!

olivettefarm @Rachna pretty similar! Sometimes when we seed in the greenhouse we accidentally drop multiple seeds into a cell. There's not enough room in each cell for multiple seeds to grow healthy before...

Leeks doing their morning stretches.
Our little leeks are happy in the greenhouse. It's easy to forget that the giant leeks you're used to start out more like a blade of grass.

Amaranth Microgreens
A study found that amaranth micros have 4-6 times more nutrients than their full grown counterparts. They have a flavor very similar to beet micros, just a bit more mild.
