Purple cabbage: a little cooked, a little raw

A spicy grilled and raw cabbage salad. I love playing with food textures. Using a mix of cooking techniques like pureeing with sautéing or grilling with hints of raw is a great way to enhance flavors of vegetables. Here I grilled half of a red cabbage and shaved about a quarter of the raw to create a unique texture from soft cabbage complemented with the crunch of the raw. Eating mixture of raw and cooked cabbage is more beneficial.
